
Chilli Con Carne
A mild chilli made with lean beef, tomatoes and peppers, served with basmati rice for a hearty family meal.
Ingredients
- •150 g Lean beef mince (5% fat)
- •75 g Dry basmati rice
- •¼ Large onion, diced
- •½ Red pepper, diced
- •1 clove Garlic, crushed
- •1½ tsp Tomato purée
- •100 g Passata
- •1 tsp Mild chilli seasoning
- •To taste Freshly ground black pepper

Method
- 1Bring a saucepan of water to the boil and cook the basmati rice according to the packet instructions.
- 2While the rice is cooking, heat a large frying pan over a medium heat.
- 3Add the beef mince and onion and cook for 5–6 minutes, breaking up the mince with a wooden spoon until browned.
- 4Stir in the red pepper and cook for 3 minutes until beginning to soften.
- 5Add the garlic and cook for 30 seconds.
- 6Stir in the tomato purée and cook for 1 minute, stirring continuously.
- 7Add the passata and the mild chilli seasoning, stirring well to combine.
- 8Simmer for 12–15 minutes, stirring occasionally until the sauce has thickened and the beef is fully cooked.
- 9While the chilli is finishing, drain the rice.
- 10Divide the rice between serving bowls and spoon the chilli over the top.
- 11Finish with freshly ground black pepper and serve immediately.
