🥘 Ingredients

  • Lean beef mince (5% fat) - 150 g
  • Dry basmati rice - 75 g
  • Large onion, diced - ¼
  • Red pepper, diced - ½
  • Garlic, crushed - 1 clove
  • Tomato purée - 1½ tsp
  • Passata - 100 g
  • Mild chilli seasoning - 1 tsp
  • Freshly ground black pepper - To taste

👨‍🍳 Method

  1. Bring a saucepan of water to the boil and cook the basmati rice according to the packet instructions.
  2. While the rice is cooking, heat a large frying pan over a medium heat.
  3. Add the beef mince and onion and cook for 5–6 minutes, breaking up the mince with a wooden spoon until browned.
  4. Stir in the red pepper and cook for 3 minutes until beginning to soften.
  5. Add the garlic and cook for 30 seconds.
  6. Stir in the tomato purée and cook for 1 minute, stirring continuously.
  7. Add the passata and the mild chilli seasoning, stirring well to combine.
  8. Simmer for 12–15 minutes, stirring occasionally until the sauce has thickened and the beef is fully cooked.
  9. While the chilli is finishing, drain the rice.
  10. Divide the rice between serving bowls and spoon the chilli over the top.
  11. Finish with freshly ground black pepper and serve immediately.
