🥘 Ingredients

  • White bread, phosphate-additive-free - 2 slices
  • Chicken breast, diced - 100 g
  • Plain natural yoghurt - 1 tbsp
  • Mild curry powder - ½ tsp
  • Red pepper, finely sliced - ¼
  • Lettuce leaf - 2 leaves
  • Olive oil - ½ tsp
  • Freshly ground black pepper - To taste

👨‍🍳 Method

  1. Mix the yoghurt and curry powder in a bowl.
  2. Add the diced chicken and coat evenly.
  3. Heat the olive oil in a frying pan over a medium heat.
  4. Cook the chicken for 7–8 minutes, turning regularly, until browned and cooked through.
  5. Allow the chicken to cool slightly.
  6. Spread the remaining yoghurt mixture over the bread.
  7. Add the lettuce, red pepper and cooked chicken.
  8. Top with the second slice of bread, cut in half and serve.
