
Blueberry & Lemon Pancakes
Fluffy homemade pancakes with a modest portion of blueberries, fresh lemon and a light maple drizzle.
Ingredients
- •70 g Plain flour
- •1 Egg white
- •100 ml Water
- •¼ tsp Baking powder
- •¼ tbsp Caster sugar
- •50 g Blueberries
- •½ lemon Lemon zest
- •¼ tsp Olive oil
- •¼ tsp Maple syrup

Non-stick frying pan, mixing bowl, whisk, spatula
Method
- 1Mix the flour, baking powder and sugar in a bowl.
- 2Whisk the egg white with the water and lemon zest, then gradually whisk into the dry ingredients to make a smooth batter.
- 3Fold in half of the blueberries.
- 4Heat the olive oil in a non-stick frying pan over a medium heat.
- 5Cook the pancakes in batches, turning when bubbles appear on the surface, until lightly golden and cooked through.
- 6Serve with the remaining blueberries and maple syrup.
