🥘 Ingredients

  • Plain flour - 70 g
  • Egg white - 1
  • Water - 100 ml
  • Baking powder - ¼ tsp
  • Caster sugar - ¼ tbsp
  • Blueberries - 50 g
  • Lemon zest - ½ lemon
  • Olive oil - ¼ tsp
  • Maple syrup - ¼ tsp

👨‍🍳 Method

  1. Mix the flour, baking powder and sugar in a bowl.
  2. Whisk the egg white with the water and lemon zest, then gradually whisk into the dry ingredients to make a smooth batter.
  3. Fold in half of the blueberries.
  4. Heat the olive oil in a non-stick frying pan over a medium heat.
  5. Cook the pancakes in batches, turning when bubbles appear on the surface, until lightly golden and cooked through.
  6. Serve with the remaining blueberries and maple syrup.
