
Asian Turkey Wrap
A colourful Asian-inspired turkey wrap with carrot, chickpeas, herbs and crisp lettuce.
Ingredients
- •½ tbsp Olive oil
- •¼ Red onion
- •75 g Lean turkey mince
- •½ clove Garlic
- •½ Red chilli
- •50 g Carrot
- •½ tbsp Low-salt soy sauce
- •handful Fresh coriander
- •handful Fresh mint
- •1 lime Lime juice
- •25 g Chickpeas, drained
- •½ tsp Cumin seeds
- •1 White Tortilla Wraps
- •3 Spring onions
- •35 g Shredded lettuce
Equipment

Method
- 1Heat half the oil in a frying pan over a medium heat and fry the onion until soft.
- 2Add the turkey, garlic and chilli and cook for about 10 minutes, until the turkey is cooked through.
- 3Add the carrot and cook for a further 5 minutes. Drain away any excess liquid and remove from the heat.
- 4Stir in the soy sauce, coriander, mint and lime juice and set aside briefly for the flavours to develop.
- 5Heat the remaining oil in a separate pan over a high heat. Add the chickpeas and cumin seeds and cook until crispy, keeping them moving so they do not burn.
- 6Warm the tortilla, then fill with the turkey mixture. Top with the spring onions, crispy chickpeas and lettuce.
- 7Seal and roll up the wrap and serve.
